Rocket Salad

Otherwise known as rucola salad, is a nice alternative to a normal green’s salad. A bit spicy from the leaves themselves and sour and sweet from the dressing, while just enough nutty and creamy from the pine nuts and the Parmigiano Reggiano shaving. So easy to make, give it a try!

Rocket Salad

Ingredients

  • 2 bunches Rocket leaves
  • Parmigiano Reggiano
  • 1 tbsp Pine Nuts , roasted and roughly crushed
  • 4-5 Sun-dried Tomatoes , chopped in strips
  • 3 tbsp EVOO , Extra Virgin Olive Oil
  • 1 tbsp Balsamic Glaze , or 1 ½ Balsamic Vinegar
  • 1 tsp Honey
  • 1 tsp Dijon Mustard
  • ½ tsp Sea Salt

Instructions

  • Wash the rocket leaves and have most of their stem removed. Roughly chop them and place in a large bowl along with the sun-dried tomatoes.
  • To make the dressing place the oil, balsamic, honey, mustard and salt in a glass jar and shake well. Then pour all over the rocket leaves and toss well.
  • Take the Parmigiano Reggiano and with a cheese slices have some shaving all over the salad. Add the pine nuts and serve.
