Chicken Souvlaki with Tzatziki
Servings: 4 People
Ingredients
For the Chicken Souvlaki:
- 1 Kg Chicken fillets , without the skin, cut in 3cm cubes
- Wooden Skewers
For the Marinade:
- 50 ml EVOO , Extra Virgin Olive Oil
- 25 ml Lemon Juice
- 2 tbsp Dry Oregano
- 1 Clove Garlic , finely minced
- 1 tsp Fine Sea Salt
- ½ tsp freshly ground Black Pepper
For the Tzatziki:
- 500 g Greek Yoghurt
- 3 Cucumbers , not peeled, shredded
- 30 ml Red Wine Vinegar
- 40 ml EVOO , Extra Virgin Olive Oil
- 1 tbsp Dry Mint , ground
- ¼ tsp Fine Sea Salt
Instructions
- Start with the marinade by combining all the ingredients in a medium bowl and whisk well.
- Add the chicken cubes in the bowl of the marinade and refrigerate for 1-2 hours.
- Remove from the refrigerator 1 hour prior to cooking and put on skewers.
- Set a large grill pan over high heat and let it heat up for 2’. Add the chicken skewers turning frequently for about 10-12’.
- In the meantime, prepare the tzatziki by mixing all the ingredients.
- Serve the chicken souvlaki next to the tzatziki, some finely sliced onions and tomatoes.
