Chicken Souvlaki with Tzatziki

Chicken Souvlaki with Tzatziki

Ingredients

For the Chicken Souvlaki:

  • 1 Kg Chicken fillets , without the skin, cut in 3cm cubes
  • Wooden Skewers

For the Marinade:

  • 50 ml EVOO , Extra Virgin Olive Oil
  • 25 ml Lemon Juice
  • 2 tbsp Dry Oregano
  • 1 Clove Garlic , finely minced
  • 1 tsp Fine Sea Salt
  • ½ tsp freshly ground Black Pepper

For the Tzatziki:

  • 500 g Greek Yoghurt
  • 3 Cucumbers , not peeled, shredded
  • 30 ml Red Wine Vinegar
  • 40 ml EVOO , Extra Virgin Olive Oil
  • 1 tbsp Dry Mint , ground
  • ¼ tsp Fine Sea Salt

Instructions

  • Start with the marinade by combining all the ingredients in a medium bowl and whisk well.
  • Add the chicken cubes in the bowl of the marinade and refrigerate for 1-2 hours.
  • Remove from the refrigerator 1 hour prior to cooking and put on skewers.
  • Set a large grill pan over high heat and let it heat up for 2’. Add the chicken skewers turning frequently for about 10-12’.
  • In the meantime, prepare the tzatziki by mixing all the ingredients.
  • Serve the chicken souvlaki next to the tzatziki, some finely sliced onions and tomatoes.
