Halloumi Puffs

Ingredients

  • 225 g Pissourkotiko Traditional Goat and Sheep Halloumi , Charalambides Christis
  • 1 Sheet Puff Pastry , Chrysi Zymi
  • ½ cup Cherry Tomatoes , sliced
  • cup Kalamata Olives , sliced
  • 45 ml EVOO , Extra Virgin Olive Oil
  • 2-3 Sprigs Fresh Oregano , leaves picked and sliced
  • 1 tsp Sweet Chilli Flakes , ground
  • ½ tsp Fine Salt
  • ¼ tsp Freshly Ground Black Pepper

Instructions

  • Thinly slice the halloumi and then in half.
  • Place in a large bowl the cut halloumi along with the sliced cherry tomatoes and olives, the oregano, chilli flakes, salt and pepper and drizzle with the olive oil and toss gently.
  • Place the pastry sheet in a baking tray lined with parchment paper and use a round mould of about 5cm (or a square one) to cut each piece.
  • Add on each piece a slice of halloumi, and on top a slice of tomato and a slice of olive.
  • Place the tray in a preheated oven and cook for about 20’ at 190° C until the pastry rises and they become light golden. Serve right away to your guests complimenting a glass of white wine.
