Thinly slice the halloumi and then in half.
Place in a large bowl the cut halloumi along with the sliced cherry tomatoes and olives, the oregano, chilli flakes, salt and pepper and drizzle with the olive oil and toss gently.
Place the pastry sheet in a baking tray lined with parchment paper and use a round mould of about 5cm (or a square one) to cut each piece.
Add on each piece a slice of halloumi, and on top a slice of tomato and a slice of olive.
Place the tray in a preheated oven and cook for about 20’ at 190° C until the pastry rises and they become light golden. Serve right away to your guests complimenting a glass of white wine.
