Avocado Cucumber Salad
Servings: 3 People
Ingredients
- 2 Avocados
- 3 Cucumbers
- 1 tsp Sweet Chili Flakes
- 1 tbsp Fresh Parsley , roughly chopped
- ½ tsp dry Coriander , ground
- 2 tbsp EVOO , Extra Virgin Olive Oil
- 1 tbsp Lemon Juice
- ½ tsp Sea Salt
- ¼ tsp freshly ground Black Pepper
Instructions
- Halve and scoop the avocados and then cut in small chunks.
- Roughly peel the cucumbers, halve and scoop out their seeds. Cut in the same size of the avocado chunks.
- Place into a bowl the avocados and cucumbers, add the coriander, chili flakes, oil and lemon juice and mix gently. Season with the salt and pepper, add the parsley and give it a final mix.
