Tahini with Olive Oil

Although Tahini is already full of oil, sesame oil, adding the olive oil gives additional richness to this favourite sauce.

Dip into it with pitta bread, veggies or falafel. Goes nicely with kebabs as well as salads!

Tahini with Olive Oil

Ingredients

  • 200g raw Tahini
  • 120ml lukewarm Water , 45°C
  • 70ml Lemon juice , to taste
  • 45ml EVOO , extra virgin olive oil
  • 1 clove very smallGarlic , very finely chopped
  • ½ tsp Sea Salt
  • 1 tbsp Fresh Parsley , chopped

Instructions

  • In a small bowl add the tahini and slowly pour in 60 ml of the water while whisking.
  • Add half the lemon juice while whisking. Keep whisking and continue adding a bit of the remaining lemon juice so that you achieve the desire density and acidity. It should be slightly thick, not running. Add more water only when the desired acidity has been achieved and you wish to reduce the density.
  • Add the garlic, salt and oil and keep whisking lightly. Garnish with the parsley and serve.
