Chicken Burgers in Pitta Bread with Tzatziki

We all love tzatziki and look for opportunities of enjoying it. These are Chicken burgers with Greek flavors that are served in pitta bread with lettuce, tomatoes and onions, and of course accompanied by a garlicky Tzatziki (press for recipe)

Chicken Burgers in Pitta Bread with Tzatziki

Ingredients

  • 700 grs Chicken Breast Fillets , cut in small cubes
  • cup Breadcrumbs
  • 1 Red Onion , roughly chopped
  • 120 grs Greek Feta Cheese , crumbled
  • ½ fresh Parsley , leaves picked and chopped
  • 2 tablespoons fresh Oregano , home grown, leaves picked and chopped
  • 2 tablespoons fresh Mint , home grown, leaves picked and chopped
  • 6 tablespoons EVOO , Extra Virgin Olive Oil
  • 2 tablespoons Lemon juice
  • ½ teaspoon Smoked Paprika
  • 1 Egg
  • 2 Pitta Bread , cut in half
  • 2 Fresh Tomatoes , sliced
  • 1 Red Onion , thinly sliced
  • 4 Lettuce Leaves , cut thinly
  • Tzatziki recipe
  • 1 ½ teaspoon Sea Salt
  • 1 teaspoon freshly ground

Instructions

  • Put a non-stick sauce pan on medium heat, add 2 tablespoons from the oil and add the onions. Sauté for 3-4 minutes until softened and slightly golden in colour. Keep aside
  • In a food processor with the metal blade on add the breadcrumbs, the sautéed onions, parsley, oregano, mint, lemon juice, salt & pepper and smoked paprika. Pulse 8-10 times for the ingredients to be cut and well combined. Remove from the food processors bowl and keep aside.
  • In the same bowl of the food processor, add the chicken cubes and pulse for 10-12 times for the meat to be minced but not to become a paste like.
  • Place the minced meat in a metal bowl add the previously pulsed mixture, add the feta cheese, the egg and 2 tablespoons of oil. Mix well with your hands and form 4 patties of about 10 cm diameter. Cover with cling film and refrigerate for 30 minutes.
  • Place a large non-stick sauce pan on high heat and pour the remaining 2 tablespoons of oil. Wait for a minute to heat up and add your patties. (you can do in 2 batched if they don’t fit in the pan. Cook for about 4 minutes each side and check doneness by squeezing them and checking the colour of the juices, looking for clear colour and not pinkish.
  • Slice open each side of the halved pitta bread, add the lettuce, tomatoes and place each burger on top of them. Put on top the onion, add Tzatziki and serve.
