Artichokes at the Farmers Market

The market is full of them! 3-4 different varieties being different not only in shape but in taste as well.

I love eating them raw although the peeling part is a real headache. Once you do that, or someone else for you, you can slice them or quarter them, add lots of lemon, add salt and ENJOY!
