Trahanas Soup with Halloumi

For those not familiar, or should I say, ‘never heard of’, Trahanas Soup with Halloumi, Trahanas is made of cracked wheat and fermented goat milk curd. Sundried to turn sour that gives a comforting soup in the winter months, while at the same time is nutritious and hearty!

  1. 4 hours before cooking the soup place the trahana in a bowl and cover with water to soften, about 1 L, extra from the water used in the Bouillon.
  2. Set a large pot over high heat, add the chicken broth and bring to a boil. Add the softened trahana with its water and simmer for about 25 minutes and until cooked. Lightly fry the Halloumi and add in the pot. Cook for further 5 minutes. Pour the lemon juice, season with the salt and serve.
