Soutzoukakia on the Grill

Made from beef meat which doesn’t have much fat thus the use of the milk and the oil.
They are tender, juicy and go se well with simple things like onions, tomatoes and a bit of bite from the chilli flakes.

Soutzoukakia on the Grill

Ingredients

  • 2kg Minced Beef Meat , double minced
  • 2 large white Onions , grated
  • 1 cup light Olive Oil
  • 2 tsp dry Cumin , ground
  • 2 tsp Sweet Smoked Paprika
  • 400g dry breadcrumbs
  • 300ml evaporated Milk , (evapore)
  • 2 tbsp crushed chili flakes , for serving
  • 1 tbsp Sea Salt
  • 2 tsp freshly ground Black Pepper
  • 1 cup fresh Parsley , leaves picked and finely chopped

Instructions

  • Add all the ingredients in a large bowl and mix thoroughly. If you want to refrigerate overnight, then lightly brush the mixture with olive oil and cover with plastic wrap.
  • Next day either turn the oven grill to maximum and place a grill 2 steps from the top or light your charcoal.
  • In the meantime, take the mixture from the refrigerator and while cold. Place some oil in your palms and form the soutzoukakia into large bullet patties of about 6-7 cm length.
  • Go back to your grill and grill for 3-4 minutes each side until nicely charred.
  • Serve with French fries and the chilli flakes on the side.
