Simple to make sauce that goes nicely with shrimps or any fish as well as with spinach salad.

Red Pepper Sauce
Ingredients
- 3 red Bell Peppers , deseeded and cut in chunks
- 3 tablespoons EVOO , (Extra Virgin Olive Oil)
- ½ clove cloves garlic, crushed , peeled and finely chopped
- 1 Shallot , finely chopped
- 50 ml White Dry Wine
- 50 ml Water , warm
- ½ teaspoon Sea Salt
- ¼ teaspoon freshly ground Black Pepper
Instructions
- In a small saucepan on medium heat add the oil and wait for a minute to heat up. Add the shallots and the garlic and sauté for 2 minutes stirring frequently.
- Add the peppers and continue sauteing for 2-3 minutes. Deglaze with the wine and wait for 2 minutes for the alcohol to evaporate.
- Reduce the heat and add the water, simmer until absorbed and peppers are soft.
- Place the above in a high-speed blender and blend until smooth. Pass through a fine sieve and serve.
