Garlicky Roasted Mushrooms

While these Garlicky Roasted Mushrooms feel very meaty, this is a Vegan side or appetizer dish that you will never want to stop eating. Part of the enjoyment is the dipping of the bread in the sauce. Obsessively delicious, simple perfection!

Garlicky Roasted Mushrooms

Ingredients

  • 500 gr Brown Button or Cremini Mushrooms , whole small ones
  • 45 gr Unsalted Butter , cut in small cubes of 1 cm
  • 30 ml olive oil
  • 2 cloves Garlic , minced through a garlic presser tool
  • 4 teaspoons Capers , rinsed and chopped
  • 20 ml Lemon juice
  • 3 tablespoons fresh Parsley , leaves picked and finely chopped
  • 1 teaspoon Sea Salt
  • ½ teaspoon freshly ground Black Pepper

Instructions

  • Preheat the oven to 225 degrees C, air circulation, rack in the middle.
  • In a large rectangular non-stick oven proof dish add the mushrooms, garlic, olive oil salt and pepper and toss.
  • Top with the butter cubes and cook for 20 minutes, stirring occasionally, aiming for golden color mushrooms. Remove from the oven and while in the oven dish add the lemon juice and the parsley.
  • Toss and serve with a loaf of bread.
