Fasolakia Yiahni (String Beans Stew)
Take a large pot or casserole and place on medium heat. Let it heat up for a minute, pour half the oil and a minute later add the onions. Sauté the onions until a bit translucent, add the garlic and sauté for 30 seconds until fragrant.
Add the beans, potatoes, cherry tomatoes, tomato passata, cumin, oregano, chili flakes, sugar, mint and season with the salt and pepper. Pour water to the level, give it a good stir increase the heat and bring it to a boil.
Place the lid without closing tightly and simmer for 45 minutes. 5 minutes before the end add most of the parsley and the remaining olive oil.
Serve and garnish with more parsley and accompany with Feta.
