Button Mushrooms for Burgers
Ingredients
- 1000 grs Button Mushrooms , thickly sliced
- 4 tablespoons EVOO , (Extra Virgin Olive Oil)
- 100 grs Dehydrated Mushrooms , various aromatic ones to include Porcini and Cremini, grinded to powder in a coffee grinder
- 1 tablespoon fresh Thyme , home grown, leaves only or 1 teaspoon of dry Thyme
- 2 cloves Garlic , sliced
- 1 tablespoon Lemon juice
- 1 teaspoon Sea Salt
- ½ teaspoon freshly ground Black Pepper
Instructions
- Add the 4 tablespoons of EVOO in a large 30 cm frying pan over super-high heat for 1-2 minute until smoking. Add the mushrooms, thyme and garlic and let sizzle and brown on one side before tossing.
- Sprinkle with the mushroom powder and cook for about 5-8 minutes, tossing occasionally. Deglaze with the lemon juice to brighten the color and season with the salt and pepper.
- Remove the garlic and keep aside warm.
