Bamies, otherwise known as Okra or ladies’ fingers, one of the most popular type of ‘LADERA, Greek dishes (stewed with tomatoes and lots of olive oil) usually served as a side dish. I have made these with frozen ones from a reputable Greek producer; so easy as you don’t have to go through the stem cutting process.
A satisfying and delicious Greek comfort dish that goes nicely with Greek yogurt.

Bamies
Ingredients
- 500 gr Bamies , frozen
- 70 ml EVOO , Extra Virgin Olive Oil
- 40 ml red wine Vinegar
- 1 small white Onion , finely chopped
- 275 ml Water , warm
- ½ tablespoon Sugar
- 1 400 gr Chopped Tomatoes , canned
- 1 cup fresh Parsley , finely chopped
- 1 teaspoon Sea Salt
- ½ teaspoon freshly ground Black Pepper
Instructions
- Preheat the oven to 180 degrees C, air circulation, rack in the middle.
- Take a medium size rectangular oven-proof tray and add the Bamies, right out of the freezer. Drizzle on top pf them the vinegar and toss. Dilute the sugar in the warm water and add to the tray.
- Add all the remaining ingredients to the tray and toss well. Cook for about 1 hour and 15 minutes until all the water has been absorbed, tossing halfway through. Remove from the oven and allow for the juices to come together for about 15 minutes.
