Not the regular green beans, they are longer, thinner and crispier. Cooking has to be limited to the minimum to retain this crispiness. I like eating them like a snack but otherwise they are an excellent side dish.
String Beans
Ingredients
- 600 grs String Beans , ends cut and snapped once in the middle
- 3 litres Water
- Grain Mustard Vinaigrette , press Grain Mustard Vinaigrette for recipe
- Sea Salt
- freshly ground Black Pepper
Instructions
- In a medium pot on high heat bring salted water to the boil.
- Add the beans and once they start boiling cook for further 30 seconds.
- Immediately remove from heat to a bowl full of cold water and some ice cubes. Drain and place in a serving bowl, toss with the vinaigrette.
