String Beans

Not the regular green beans, they are longer, thinner and crispier. Cooking has to be limited to the minimum to retain this crispiness. I like eating them like a snack but otherwise they are an excellent side dish.

Ingredients

  • 600 grs String Beans , ends cut and snapped once in the middle
  • 3 litres Water
  • Grain Mustard Vinaigrette , press Grain Mustard Vinaigrette for recipe
  • Sea Salt
  • freshly ground Black Pepper

Instructions

  • In a medium pot on high heat bring salted water to the boil.
  • Add the beans and once they start boiling cook for further 30 seconds.
  • Immediately remove from heat to a bowl full of cold water and some ice cubes. Drain and place in a serving bowl, toss with the vinaigrette.
