Ingredients
For the Salad
- 200 grs Parsnip grated
- 200 grs Beetroot grated
- 3 small Carrots grated
- 2 Red Blood Oranges peeled and wedged
- ¼ cup unsalted Pistachios toasted and crushed
- ¼ cup Coriander leaves
- handfull Mint leaves
- Sea Salt
- freshly ground Black Pepper
For the Dressing
- 3 tablespoons EVOO (Extra Virgin Olive Oil)
- 2 tablespoons Rose water
- 2 teaspoons Honey
- 1 Lemon Zest
- 3 tablespoons Lemon juice
- 3 tablespoons Orange juice
- 1 teaspoon Cumin seeds toasted and crushed
- Sea Salt
- freshly ground Black Pepper
