Chicken Burgers with Courgettes

Chicken Burgers with Courgettes

Ingredients

  • 750 g Chicken Mince
  • 2 Medium Courgettes , grated
  • 3 Scallions , white and green parts, finely chopped
  • 1 tbsp Tomato Paste
  • 2 Eggs
  • 1 tbsp Dijon Mustard
  • ½ cup Breadcrumbs , preferably Panko

Spice Mixture

  • 1 tbsp Sweet Chilli Flakes , ground
  • 2 tsp Sumac
  • 1 tbsp , dry Coriander, ground
  • 1 tsp Fine Sea Salt
  • ½ tsp freshly cracked Black Pepper

Instructions

  • We start by making the spice mixture by simply mixing everything together.
  • Add in a large bowl the chicken and mix along with the rest of the ingredients. Add the spice mixture and mix well.
  • Form into a bit smaller than tennis balls and then flat them out to about 2 ½ cm thickness. Place them in an oven proof dish, no need to add any oil and place in a preheated oven at 190°C, air circulation, top and bottom elements on, rack set towards the upper part. After 10’ flip them over and cook for another 10’. Serve with a salad and optionally with yoghurt.
