- 1 Kg Turkey Mince
- 150 g Carrots peeled and shredded
- 5 Scallions white and green parts, finely chopped
- 2 Medium/Large Onions finely chopped
- 3 Cloves Garlic finely minced
- 3 tbsp Fresh Coriander finely chopped (Parsley can also do)
- 1 tbsp Dry Ginger ground
- 160 g Breadcrumbs preferably Panko
- 3-4 Eggs
- 1 tsp Dry Coriander ground
- 1 tsp Dry Oregano
- 1 tsp Smoked Paprika
- 1 tsp Sweet Chili Flakes ground
- 1 tsp freshly ground Black Pepper
- 1 tsp Fine Sea Salt
- 2 tbsp EVOO Extra Virgin Olive Oil
Instructions
- Place a medium pan or pot on medium heat and pour the oil. Once it heats up add the onions and carrots and cook for about 2’ to soften. Then add the scallions, garlic and ginger and continue cooking for 3’. Turn off the heat and keep aside.
- Add in a large bowl the turkey mince along with the above mixture as well as the rest of the ingredients and mix well.
- Form into a bit smaller than tennis balls and then flat them out to about 2 ½ cm thickness. Place them in an oven proof dish, no need to add any oil and place in a preheated oven at 200°C, broiler on, rack set towards the upper part. After 8’ flip them over and cook for 7’. Serve with rice.
