Artichokes

Artichokes

Ingredients

  • 12 Artichokes
  • 3 tbsp EVOO , Extra Virgin Olive Oil
  • ½ cup Fresh Parsley , leaves picked and roughly chopped
  • ½ cup Fresh Mint , leaves picked and roughly chopped
  • 100 ml White Wine
  • 1000 ml Water
  • 2 Lemons
  • 100 ml Lemon Juice
  • tsp Fine Sea Salt
  • ½ tsp freshly ground Black Pepper

Instructions

  • Prepare a bowl filled with water and a lemon or two, in slices to keep the artichokes from turning black.
  • Have another, smaller bowl, and add into it the lemon juice.
  • While preferably wearing gloves, from keeping your hands clean, wet your hands with the lemon juice and peel the leaves of the artichokes while keeping on their very tender ones. Cut them almost 1 cm away from their hearts and spoon out their ‘hairy’ inside and add them to the bowl of water. Cut the top part of their stem peel it and again add them to the bowl of water.
  • Place a large pot on medium heat. Pour the oil, allow to heat up and drop in the parsley and the mint. Sauté for 2’ and deglaze with the wine. Allow for the alcohols to evaporate and add into the pot the artichokes and their stems. Season with the salt and pepper, pour warm wate to just cover them and add a sheet of parchment paper on top of them. Place the lid on and simmer for 45’. Can be served warm or cold.
