Halloumi Yoghurt Quiche
Servings: 6 People
Ingredients
- 300 Straggato Authentic Yoghurt , Charalambides Christis
- 1 Pissourkotiko Traditional Sheep Halloumi , Charalambides Christis, roughly grated
- 350 g Courgettes , halved and seeded, sliced
- 1 Red Bell Pepper , seeded and diced
- 8-10 Eggs
- 1 tbsp EVOO , Extra Virgin Olive Oil
- 1 tsp Dry Coriander , ground
- 1 tsp Fine Sea Salt
- ½ tsp freshly ground Black Pepper
Instructions
- Place in a glass bowl the eggs and whisk them. Add the yoghurt along with the grated halloumi as well as the sliced courgettes and the diced peppers. Sprinkle the coriander, season with the salt and pepper and mix well.
- In the meantime, turn the oven on, 185°C, air circulation and rack set at the middle.
- Use a round baking pan, or square one, or in a round pan, and brush the oil all over it. Pour the egg mixture and place in the oven to be baked for 45’.
- Remove from the oven and allow to cool for 15’. Slice and serve.
