Chicken Kebabs on the Skewer

Chicken Kebabs on the Skewer

Ingredients

  • 750 g Chicken Mince , from fillets
  • 1 Green Long Horn Pepper , cooked in the oven and then seeded and finely chopped
  • 4 Scallions , white and green parts, finely chopped
  • 3 tbsp Fresh Coriander , leaves picked and roughly chopped
  • 1 tsp Dry Cumin , ground
  • 1 tsp Dry Coriander , ground
  • 1 tsp Dry Ginger , ground
  • 1 tsp Turmeric Powder
  • ¾ tsp Garam Massala
  • 1 tsp Fine Sea Salt
  • ½ tsp freshly cracked Black Pepper

Instructions

  • Add in a large bowl the chicken and mix along with the rest of the ingredients.
  • Form 6, about 12cm long kebabs and place in an oven proof dish. Press a skewer (that has been soaked in water for an hour) on each of the kebabs and seal well. Place the dish in the freezer for 15’.
  • In the meantime, turn the oven on at max degrees with the grill/broiler on and the rack set at the upper middle position, about 10-12cm away from the grill.
  • Place the dish with the kebabs in the oven and cook for 10’ and until nicely charred. Flip them over and cook for further 6’. Serve with your favourite roasted veggies.
