Green Peppers stuffed with Chicken Mince
Servings: 4 People
Ingredients
- 500 g Chicken Mince
- Green Long Horn Peppers , halved and seeded
- 1 Small Onion , finely minced
- 3 Scallions , white and green parts, finely chopped
- 1 Cup Fresh Parsley , leaves picked and roughly chopped
- 75 g Feta Cheese , crumbled
- 2 tbsp Tomato Paste
- 2 tbsp Yoghurt
- 2 Egg Yolks
Spice Mixture:
- 1 tsp Sweet Chilli Flakes , ground
- 1 tsp Smoked Paprika
- 1 tsp Dry Oregano , ground
- 2 tsp , dry Coriander, ground
- 1 ½ tsp Fine Sea Salt
- 1 tsp freshly cracked Black Pepper
Instructions
- We start by making the spice mixture by simply mixing everything together.
- Add in a large bowl the chicken mix along with the rest of the ingredients. Add the spice mixture and mix well.
- Fill the peppers with the chicken mixture and place them in an air-fryer. Air fry for 18’ at 200°C. Serve with yoghurt.
