Cherry Tomatoes Sauce
Ingredients
- 1000 g Cherry Tomatoes , halved
- 1 Large Onions , finely chopped
- 2 Cloves Garlic , minced
- 4 tbsp EVOO , Extra Virgin Olive Oil
- 75 ml White Wine
- 2 tbsp Dry Oregano , ground
- 1 tbsp Dry Coriander , ground
- 1 ½ tbsp Sweet Chili Flakes , ground
- 1 ½ tsp Sugar
- 5-6 dashes Worcestershire Sauce
- 1 tsp Sea Salt
- 1 tsp freshly ground Black Pepper
Instructions
- Prepare the dry mixture by mixing in a small bowl the oregano, coriander chili flakes, sugar, salt, pepper and keep aside.
- Place a medium size pot on medium heat and drizzle the oil. Once hot add the onions, reduce the heat and sauté until soft, about 4’. Add the garlic and toss until fragrant, about 1’. Add the wine and deglaze for a minute or so.
- Add the tomatoes increase the heat and bring to a boil. Once boiling reduce the heat, add the Worcestershire sauce along with the dry mixture, place the lid on and simmer for about 25’, stirring couple of times through the process.
- Remove from the heat and allow to cool for about 10’. Then use a hand-held blender and process carefully until a creamy sauce with small fine chunks is created.
- Use immediately the quantity needed and the rest to be placed in a sterilized airtight glass jar and refrigerate for couple of weeks or even freeze for few months.
