Salmon with Asparagus

Salmon with Asparagus

Ingredients

  • 2 250g Salmon fillets , skin on
  • 3 tbsp EVOO , Extra Virgin Olive Oil
  • 1 – inch Fresh Ginger , grated from frozen
  • 1 tsp Turmeric
  • 20 ml Mirin
  • 15 ml Rice Wine Vinegar
  • ½ tsp Sea Salt
  • ¼ tsp freshly ground Black Pepper
  • Boiled Asparagus with Avocado Hollandaise Sauce (read the recipe here)

Instructions

  • Prepare the marinate in a bowl by combining 1 tbsp of the oil along with the ginger, turmeric, mirin and rice wine vinegar. Mix well and add to the marinate the salmon fillets. Toss carefully to get well coated and refrigerate for two hours.
  • Half hour before cooking the fillets remove from the refrigerator. Place a medium sauteing pan on medium heat and when it heats up pour the remaining 2 tbsp of oil and a minute later add the fillets skin side down. With the lid slightly askew so that the inside of the salmon fillets are also cooked, sear for 4’ until the salmon’s skin has crisped, then flip and sear for 3’ more. Serve with boiled asparagus with avocado hollandaise sauce.
