Smashed Potatoes
Servings: 6 People
Ingredients
- 25 very small Potatoes , about 1.2Kg
- EVOO , Extra Virgin Olive Oil
- 1 tbsp Fresh Thyme , leaves picked and chopped
- 20 fresh Sage Leaves , chiffonade and finely chopped
- 4 cloves Garlic , smashed, optional
- 1 tbsp Paprike , optional
- 1 ½ tsp Sea Salt
- 1 tsp freshly ground Black Pepper
Instructions
- Wash well the potatoes without peeling them.
- Place a large pot on high fire ¾ filled with water, bring to a boil and add the potatoes. Simmer for 15’, remove from fire and allow to dry for about 10’
- In the meantime, preheat the oven to 200°C, air circulation, top/bottom elements turned on (not grill/broiler), rack in the middle.
- Take an oven proof dish and lightly brush it with oil. Toss in the potatoes and with a metallic spatula press/smash the potatoes reducing their height by half. Drizzle with olive oil, season with salt and pepper and add on top of them the chopped thyme and sage as well as the optional paprika. Add to the tray the optional smashed garlic and place in the oven cooking for about 40’ aiming for a nice golden colour.
