Fresh White Beans (Fasolia Ksekounia, Φασόλια Ξεκούνια)
[featured-images]Their creamy texture is hard to be found elsewhere and fresh white beans are a staple in our diet, high in protein making them an excellent meat substitute for vegetarian and/or vegan diets. Served warm or cold, dressed with Extra Virgin Olive Oil and fresh lemon juice, and accompanied by anchovies, or salted tuna, olives, cherry tomatoes, chilies, and radishes.

Fresh White Beans
Servings: 6 People
Ingredients
- 1 Kg Fresh White Beans , removed from their pods
- EVOO , Extra Virgin Olive Oil
- Freshly squeezed lemon
- 3 tbsp Fresh Parsley , finely chopped
- 1 tbsp Sea Salt
CONDIMENTS
- Green or Black Olives
- Salted Anchovies
- Green Chilies
- Cherry Tomatoes
- Scallions
- Radishes
Instructions
- Place a large pot or casserole on high fire filled with water. Add the salt, bring to a boil, and add the beans. Bring again to a boil and simmer on low heat with the lid askew for 30-40’. You want them well cooked but not mushy. Remove from the fire and drain.
- Serve and pour all-over the oil and lemon and add some parsley. Remember to serve the above condiments and a green salad.
