Granola Bars with Blackcurrants

Crunchy oatmeal Granola Bars, naturally sweetened and packed with flavour from the blackcurrants and coconut. Toasting the oats makes much of a difference and the hazelnuts provide some extra crunchiness. Chia seeds are not only known to provide health benefits, but they do their wonder binding things together (along with the honey).

Granola Bars with Blackcurrants

Ingredients

  • 4 ½ cups Rolled Oats , 650g
  • 240 g Honey
  • ¼ cup Brown Sugar , 60g
  • 1 ¾ cups Blackcurrants , 320g, whole
  • ½ cup Grated Coconut , 90g
  • ½ cup Chia Seeds , 120g
  • ¾ cup Hazelnuts or Pecans , 180g, roughly chopped
  • ½ tsp Cinnamon , ground
  • 1 tsp Fine Salt
  • 5 tbsp EVOO , Extra Virgin Olive Oil

Instructions

  • Place a large high wall frying pan on high heat and add the oil. A minute later toss in the oats and the salt and toast until lightly browned and fragrant, making sure that you toss them very frequently so as not to burn. Remove from the heat and place in a large bowl and allow to cool.
  • Add a small pot on low heat and pour in the honey along with the sugar. While stirring continuously, allow for the honey to melt and the sugar to dissolve. Remove from the heat and allow to cool.
  • Back to the bowl with the oats, add the baking powder and mix well. Then add the raisins, coconut, chia seeds and hazelnuts and mix well. Pour the honey mixture and again mix well.
  • In the meantime, turn on the oven to 180°C, air circulation and rack in the middle.
  • Use a 45x30cm baking pan and spread all over the oat’s mixture. Press well and smooth the top of the mixture. Place the pan in the fridge and allow to cool for about 90’. Remove from the fridge and cut into squares.
