Asian Chicken with Bok Choy
Servings: 5 People
Ingredients
- 1.5 kgs Chicken breasts without the skin , cut in small chunks of 3-4cm
- 6 Bok Choy , leaves separated and well washed.
- 2- inch Fresh Ginger , peeled and julienned
- 4 tbsp Rapeseed oil
- 50 ml Water
- 1 tbsp Sesame Seeds
- 6 Scallions , white and green parts, finely chopped
For the Sauce
- 30 ml Lime Juice
- 50 ml Soy Sauce
- 15 ml Chili Sauce
- 20 ml Sesame Oil
- 2 tbsp Honey
- 1 tbsp Ginger , grated
- 2 tbsp Cornstarch
Instructions
- We start with the sauce where we dilute the cornstarch in 4 tbsp of water. Then add the rest of the ingredients, mix well and keep aside.
- We make the bok choy by placing a wok on low/medium heat, pour 2 tbsp of the oil, add half the ginger and sauté for 3’ to soften. Drop in the bok choy leaves and sauté for a minute or so. Then pour the water, cover with a lid and simmer for 1’. Open the lid, pour ⅓ of the sauce and simmer for another minute. Remove from the heat to a plate and keep aside.
- Wipe clean the wok and place on low/medium heat. Pour the remaining oil and ginger and sauté for 3’. Add the chicken chunks along with the white parts of the scallions and sauté until well coloured on all sides, about 7’. Then add the remaining sauce and cook for another 5’.
- Add the green parts of the scallions, mix and serve over rice and the bok choy and its sauce on top. Finally sprinkle on top the sesame seeds.
