Crispy Halloumi Sandwich with Sauce Tartare

Crispy Halloumi Sandwich with Sauce Tartare

Ingredients

  • 1 Pissourkotiko Traditional Goat & Sheep Halloumi , Charalambides Christis, thickly sliced
  • 1 Cup Breadcrumbs , Preferably Japanese Panko
  • 1 Egg , whisked in a bowl
  • ½ Cup All-Purpose Flour
  • 1 tsp Dry Coriander , ground
  • 2-3 Small Pickled Cucumbers , sliced
  • 3-4 Soft cabbage Leaves
  • 4 Slices Country Style Bread , thickly sliced
  • EVOO , Extra Virgin Olive Oil

Sauce Tartare

  • 6 tbsp Mayonnaise
  • 1 tbsp Red Onion , finely minced
  • 1 tsp Capers , chopped
  • 1 tsp Pickled Cucumbers , chopped
  • 1 tbsp Fresh Parsley , finely chopped
  • 1 tsp Dijon Mustard
  • 1 tsp Worcestershire Sauce
  • 1 tbsp Lemon Juice
  • ¼ tsp freshly ground Black Pepper
  • ½ tsp Fine Sea Salt

Instructions

  • First we make the sauce tartar by mixing all ingredients together. Keep aside.
  • Turn the oven on at 185° C air circulation and rack set in the middle. Prepare an oven proof dish lined with parchement paper, drizzled with oil.
  • Place the breadcrumbs in a plate and the flour mixed with the coriander to another one. Place one by one the halloumi slices into the plate with the flour to be well coated. Drench any excess flour. Then dip into the bowl with the whisked egg and immediately into the plate with the breadcrumbs to get well coated while pressing some of the breadcrumbs on the halloumi.
  • Repeat for the rest of the halloumi slices and add into the oven dish. Drizzle some more olive oil over the coated halloumi and place in the pre-heated oven to be baked for 25’ and until golden brown.
  • Remove from the oven and immediately build the 2 sandwiches by spreading the sauce tartare on 2 slices of bread. Then add on top some cabbage leaves and 4 slices of the halloumi. Add couple of slices of the pickled cucumber and close the sandwiches with the remaining slices of bread and enjoy.
