Meatballs with Sweet Potatoes

Made some juicy Meatballs with Sweet Potatoes for dinner tonight! The smell had her running to the kitchen as soon as I started cooking. This recipe is a keeper – so easy and flavourful!

Meatballs with Sweet Potatoes

Ingredients

  • 1 Kg Minced Beef , Chuck
  • 750 g Sweet Potatoes , Peeled and cut in large chunks
  • 1 Onion , finely minced
  • 3 Eggs
  • 1 tbsp Sweet Chili Flakes , ground
  • 1 tbsp Smoked Paprika
  • 150 g Breadcrumbs
  • 3 tbsp Fresh Parsley , finely chopped
  • ½ tsp All-Spice , ground
  • 3 tbsp EVOO , Extra Virgin Olive Oil
  • 1000 ml Broth , mixture of chicken and vegetables diluted with 1 tbsp of tomato paste
  • 1 ½ tsp Fine Sea Salt
  • 1 tsp freshly ground Black Pepper

Instructions

  • Use a large glass bowl and add the minced beef along with the onions, eggs, chili flakes, paprika, breadcrumbs, parsley, all-spice and season with 1 tsp salt and ½ tsp pepper. Mix well and form into small size ball, a bit larger than the size of ping-pong balls. (about 45g each)
  • Take a large frying pan and place on medium/high heat. Pour the oil and once it heats up add the meatballs searing them all over their sides until nicely golden browned, 4-5’.
  • Add the sweet potatoes, pour the broth, place the lid of the pan on and simmer for 30’ while mixing gently every now and then. If needed add water to avoid drying out.
  • Remove from the heat and serve.
