Classic Vinaigrette Updated

Course: Dressing
Cuisine: International

Ingredients

  • 100 ml Rapeseed Oil
  • 100 ml EVOO , Extra Virgin Olive Oil
  • 70 ml Apple Cider Vinegar , or mild White Vinegar
  • 30 ml Lemon juice
  • 1 ½ tbsp Dijon Mustard
  • 1 tbsp Anchovy Paste
  • 1 tbsp dry Coriander , ground
  • 1 tbsp dry Thyme , not ground
  • 1 ½ tbsp Honey
  • 1 tsp Sea Salt
  • ½ tsp freshly ground Black Pepper

Instructions

  • Add all the ingredients except of the oils in the glass bowl of a blender or food processor with the metal blade attached and while pulsing slowly pour the oils for a nice emulsification. The result is a thick/viscous dressing.
