Classic Vinaigrette Updated
Ingredients
- 100 ml Rapeseed Oil
- 100 ml EVOO , Extra Virgin Olive Oil
- 70 ml Apple Cider Vinegar , or mild White Vinegar
- 30 ml Lemon juice
- 1 ½ tbsp Dijon Mustard
- 1 tbsp Anchovy Paste
- 1 tbsp dry Coriander , ground
- 1 tbsp dry Thyme , not ground
- 1 ½ tbsp Honey
- 1 tsp Sea Salt
- ½ tsp freshly ground Black Pepper
Instructions
- Add all the ingredients except of the oils in the glass bowl of a blender or food processor with the metal blade attached and while pulsing slowly pour the oils for a nice emulsification. The result is a thick/viscous dressing.
