Chicken Burgers with Courgettes
Servings: 4 People
Ingredients
- 750 g Chicken Mince
- 2 Medium Courgettes , grated
- 3 Scallions , white and green parts, finely chopped
- 1 tbsp Tomato Paste
- 2 Eggs
- 1 tbsp Dijon Mustard
- ½ cup Breadcrumbs , preferably Panko
Spice Mixture
- 1 tbsp Sweet Chilli Flakes , ground
- 2 tsp Sumac
- 1 tbsp , dry Coriander, ground
- 1 tsp Fine Sea Salt
- ½ tsp freshly cracked Black Pepper
Instructions
- We start by making the spice mixture by simply mixing everything together.
- Add in a large bowl the chicken and mix along with the rest of the ingredients. Add the spice mixture and mix well.
- Form into a bit smaller than tennis balls and then flat them out to about 2 ½ cm thickness. Place them in an oven proof dish, no need to add any oil and place in a preheated oven at 190°C, air circulation, top and bottom elements on, rack set towards the upper part. After 10’ flip them over and cook for another 10’. Serve with a salad and optionally with yoghurt.
