Chicken Gyros – Doner

There’s nothing quite like the feeling of making something delicious for someone you care. Especially when they devour it with a giant smile and say it’s the best they’ve ever had. This chicken gyros recipe is my secret love language, and it never fails to impress her. Served with boiled beans as she is on a diet!

Chicken Gyros-Doner

Ingredients

  • 750 g Chicken Mince , from breast fillets
  • 70 ml Fresh Milk
  • 2 Scallions , finely chopped
  • 2 tbsp fresh Parsley , finely chopped
  • ¼ tsp Cloves , ground
  • 1 tsp Oregano , ground
  • ½ tsp Allspice , ground
  • 1 tbsp Sweet Chilli Flakes , ground
  • ½ tsp Cumin , ground
  • 60 g fine Breadcrumbs
  • 40 ml EVOO , Extra Virgin Olive Oil, plus more for the oven dish
  • 2 tsp Baking Powder
  • ½ tsp Sea Salt
  • ½ tsp freshly ground Black Pepper

Instructions

  • Add all the ingredients in a bowl and mix well and until almost a paste like mixture is achieved.
  • Take an oven proof baking dish, dimensions about 18cm x 7cm and about 5cm in height and brush it lightly with olive oil. Spread the gyro mixture and use a spatula to make sure that is evenly spread.
  • Cook in an air-fryers with the ‘Roasting’ mode on for 18-20’ at 185°C aiming for a nice golden colour. Remove from the oven and on to a cutting board. Cut in slices and serve.
