Potato Wedges
Servings: 6 People
Ingredients
- 5-6 Potatoes , medium size
- 75 ml EVOO , Extra Virgin Olive Oil
- 30 ml Lemon Juice
- 1 tbsp Dijon Mustard
- 1 tbsp Whole Grain Mustard
- 1 tbsp Dry Oregano , ground
- 1 tbsp Dry Coriander , ground
- 1 tbsp sweet Chili Flakes , ground
- 1 tsp Smoked Paprika , medium heat
- 1 ½ tsp Fine Sea Salt
- ½ tsp freshly ground Black Pepper
Instructions
- Mix all the ingredients except of the potatoes in a large bowl.
- Wash and peel the potatoes, then cut them in half lengthwise and then in 3 wedges each half. Place them in the bowl with oil mixture and toss to get well coated.
- In the meantime, turn on the oven to 200°C, air circulation, rack in the middle.
- Use a large oven dish with rack and place the potatoes on the rack. Add in the oven cooking for 30’. Then take out of the oven and place back into the bowl with the oil mixture for a second coating, or just add the remaining marinade and gently toss. Back into the oven for 20’-30’ and until they become crispy and golden brown.
