Otherwise known as “St. Pierre”, or “Peter’s Fish”, due to the black spot on the side of the fish where it is said to represent the fingerprint of St Peter when he lifted it from the sea. Delicate and very tasty.

John Dory

Ingredients

  • 1 John Dory , filleted
  • 2 tbsp EVOO , Extra Virgin Olive Oil
  • ½ tsp Dry Coriander , ground
  • ½ tsp Fine Sea Salt
  • ¼ tsp freshly ground Black Pepper

Instructions

  • An hour before using, take the John Dory fillets out of the refrigerator and allow to come to room temperature.
  • Preheat the oven to 190° C, high and low element (not grill/broiler) on.
  • Take an oven proof dish and brush 1 tbsp of the oil. Place the dish in the oven at the very low position, actually touching the base of the oven as you want to heat-up the oil to crust the skin of the fillets.
  • In the meantime, season the fillets with the salt and pepper and sprinkle the coriander. Just of couple of minutes after placing the dish in the oven, take it out from the oven and add in it the fillets. Return in the oven and cook for about 10’.
  • Remove from the oven and drizzle some more oil on them. Serve with potatoes and vegetables of your liking.
