Broad Beans Mash
Servings: 4 People
Ingredients
- 500 g Fresh Broad Beans
- 2 Dry Bay Leaves
- 1 ½ Avocado
- 2 tbsp EVOO , Extra Virgin Olive Oil
- 4 Scallions , white and green parts, roughly chopped
- 1 cup Fresh Coriander , leaves picked
- 2 Fresh Green Chili peppers , seeded and inside membrane removed
- ½ tsp Dry Coriander , ground
- ½ tsp Fine Sea Salt
- ¼ tsp freshly ground Black Pepper
Instructions
- Take the beans out of their pods and add with the bay leaves into a pot with boiling water, lightly salted. Cook for 40’ to soften and remove from the pot into a colander to drain.
- Place a small pan on low heat and pour the oil. A minute later add the spring onions cooking for just 3’ to soften a bit. Remove from the heat and allow to cool.
- Place the avocados into the bowl of a food processor with the metal blade attached along with the coriander, chilies and the cooked scallions. Pulse for a minute or so and then add the drained broad beans (keeping few for garnishing, along with the dry coriander, season with the salt and pepper and pulse to a fine mash.
- Serve in a bowl and garnish with the kept broad beans.
