Grilled Wild Mushrooms
Ingredients
- 1 kg Wild Red Mushrooms
- 50 ml EVOO , Extra Virgin Olive Oil
- 30 ml Lemon Juice
- 1 tsp Garlic Paste
- 1 tsp Dry Thyme , ground
- 1 tsp Dry Coriander , ground
- 1 tsp Fine Sea Salt
- ½ tsp freshly cracked Black Pepper
Instructions
- Start by softly cleaning the mushrooms using a soft brush.
- Place in a small bowl the oil along with the lemon, garlic paste, thyme and coriander and whisk well to emulsify.
- Cut the stems of the mushrooms but don’t throw them away. Equally tasty. Add the mushrooms in a large bowl and pour all over them the oil mixture. Season with the salt and pepper.
- Turn a bbq gas grill on, at medium heat. Add the mushrooms and cook for about 12’ turning halfway through and basting with any oil mixture that was left in the bowl.
- Remove from the grill and season with more salt to taste a drizzle of oil and serve.
