Pickled Beans
Ingredients
- 350 g Green Beans , washed and tips cut
- 250 ml White Vinegar , good quality
- 250 ml Apple Cider Vinegar
- 250 ml Water
- 2 Sprigs Thyme
- 1 tsp Coriander
- 1 tsp All-Spice berries
- 1 tsp Black Peppercorns
- Long peels of 1 Lemon and then juiced , filtered
- 25 g Sugar
- 1 tsp Fine Sea Salt
Instructions
- Put a medium saucepan on medium heat and add the above ingredients except of the beans and cover. Bring to a boil, give it a good stir, turn off the heat and let stand for 15’. Open the lid and allow to cool.
- Divide the beans and add them into 2 jars. Pour the above cooled mixture making sure that the beans are covered. Take some parchment paper and press it on top of the beans to make sure that they are submerged in the pickling liquid.
- Close the jars and leave in a cool place for 10 days for the pickling juice to make its magic! Enjoy on their own or with BBQ meats or charcuterie.
