Feta Fried Eggs on Greek Fries
Servings: 2 People
Ingredients
- 2 Eggs
- 100 g Feta , Charalambides Christis
- 2 Medium/Large Potatoes , peeled
- 3 tbsp EVOO , Extra Virgin Olive Oil
- 1 tsp Dry Oregano
- ½ tsp Sweet Chilli Flakes
- ½ tsp Dry Coriander , ground
- 1 Lime
- ½ tsp freshly cracked Black Pepper
Instructions
- Start with the fries by thickly cutting the potatoes into sticks, a bit larger than 1cm width, and adding them into a bowl. Pour 2 tbsp of oil on them, sprinkle the oregano and season with the salt and half the quantity of pepper and toss to coat.
- Add the fries into the basket of an air fryer and fry for 25’ at 190°C. After 15’ open the air fryer, flip them over and continue cooking until golden and crispy. When ready add into the serving dish and wait for the feta/eggs to cook.
- In the meantime, place a medium size nonstick pan on medium/low heat and pour the remaining 1 tbsp of oil. Crumble the feta into the pan and spread it all-over. When it starts sizzling and getting a bit of colour, crack the eggs and add on top of the feta. Sprinkle the chili flakes and the coriander and season with the remaining pepper. Allow for the feta to cook until it’s deeply brown and crispy while the eggs are cooked through with the yolk remaining runny.
- Remove from the pan and place over the fries, squeeze a quarter of a lime on top and enjoy while dipping the fries in the egg yolks. A green salad on the side works very fine indeed.
