Simple and satisfying, delicious, aromatic, fragrant and full of flavour, this dish has it all. Just make sure that a loaf of bread is handy as dipping into the sauce is equally satisfying.
I chose to use the already made tomato pasta sauce, but you can always replace it with a can of plum tomatoes and increase just a bit the seasoning.

Mussels With Tomato and Pepper
Servings: 5 People
Ingredients
- 1 Kg Fresh Mussels , ask your fishmonger to have them cleaned
- 1 small Yellow Onion , finely minced
- 1 large Tomato , seeded and diced
- 2 medium Green Horn Peppers , Florinis, diced
- 2 cloves Garlic , finely sliced
- 3 tbsp EVOO , Extra Virgin Olive Oil
- 1 tbsp unsalted Butter
- 150 ml White Wine
- 2 tbsp fresh Parsley , leaves picked and finely chopped
- ½ tsp Fine Sea Salt
- ½ tsp freshly ground Black Pepper
Instructions
- Set a large pot or casserole over medium heat, pour the oil and add the butter and let it heat up for 1’. Add the onions and cook for about 5’ to soften. Add the garlic and cook for only 30’’.
- Add the tomatoes and the peppers and cook for 2’ while tossing frequently. Deglaze with the wine, season with the salt and pepper and add the parsley.
- Immediately add the mussels, turn up the heat and cook for about 5’ minutes until the mussels open.
