Potato Planks
Servings: 6 People
Ingredients
- 4-5 Potatoes
- 100 ml EVOO , Extra Virgin Olive Oil
- 30 ml Lemon Juice
- 2 tbsp Dijon Mustard
- 1 tbsp Dry Coriander , ground
- 1 tbsp Smoked Paprika , medium heat
- 1 tsp Fine Sea Salt
- ½ tsp freshly ground Black Pepper
Instructions
- Mix all the ingredients except of the potatoes in a large bowl.
- Wash and peel the potatoes, then slice them in planks of about 3-4mm thickness. Place them in the bowl with the oil mixture tossing well to get evenly coated.
- In the meantime, turn on the oven to 190°C, air circulation, rack in the middle.
- Use a large oven-proof baking dish, or 2 if needed. Place the planks all-over without overlapping each other. Pour on them the remaining oil mixture and cook for about 25’-30’ until nicely crispy and golden brown. Halfway through, about 20’ later, you remove from the oven and flip the planks.
