The combination of these two greens has always been a favourite of mine and I would make it whenever ‘Souvla’ is on the menu. Keep the dressing simple lemony.

Coriander Lettuce Green Salad
Servings: 6 People
Ingredients
- 1 Large Lettuce , mostly green parts, thinly sliced
- 3 Bunches Coriander , leaves picked and roughly chopped
- 10 Small Scallions , thinly sliced
- 1 tbsp dry Coriander
- 50 ml Lemon Juice
- 75 ml EVOO , Extra Virgin Olive Oil
- 1 tsp fine Sea Salt
- 1 tsp freshly ground Black Pepper
Instructions
- In a medium size bowl add the lemon juice, dry coriander, salt and pepper while slowly pouring the oil and whisking at the same time.
- Spread the washed lettuce and coriander on kitchen towels and allow to completely dry.
- Put in a large bowl the salad ingredients including the scallions, pour the dressing and toss.
