Poached Cod
Servings: 2 People
Ingredients
- 2 Cod Fillets , about 200g each
- 20 g Butter , unsalted
- 1 tbsp Rapeseed Oil , or any vegetable oil
- 60 ml Chicken Stock
- 2 Sprigs Fresh Thyme
- ½ tsp Fine Sea Salt
- ¼ tsp Freshly ground Black Pepper
Instructions
- Use a medium sauté pan and place it on medium heat. Add the oil and the butter and wait for a minute to heat up. Add to the pan the cod fillets and fry for 3’ without moving them. Flip them on their other side, season with the salt and pepper and pour the chicken stock. Cover the pan with a lid, reduce the heat to low and steam for 5’.
- Remove to a plate with your favourite salad or veggies, garnish with the thyme and enjoy.
