Chicken Drumsticks Yoghurt Marinated
Servings: 2 people
Ingredients
- 5 Chicken Drumsticks , skin on
- 200 g Yoghurt
- 1 tbsp Dijon Mustard
- 1 tsp dry Coriander
- 1 tsp dry Ginger , ground
- ½ tsp Cumin , ground
- ½ tsp Oregano , ground
- 1 clove Garlic , roasted and mashed
- 30 ml Lemon Juice
- 60 g Blue Danish Cheese
- 40 g Anari Cheese ,grated
- 40 ml EVOO , Extra Virgin Olive Oil
- 100 g fine Breadcrumbs
- 1 tsp Sea Salt
- ½ tsp Freshly Ground Black Pepper
Instructions
- From previous night we make the marinade by combining all the above ingredients except of the chicken and breadcrumbs. Add the chicken drumsticks to the marinade and make sure that they are well covered with it. Cover with plastic wrap and refrigerate overnight.
- Next day remove the chicken from the fridge and allow to come to room temperature.
- In the meantime, turn the oven on at 200°C, air circulation and rack set at the middle.
- Place the breadcrumbs in a plate and one by one roll the drumsticks in the breadcrumbs to get fully coated.
- Take an oven proof dish and line it with parchment paper. Add the drumsticks and cook for 30-35’ and until the breadcrumbs get a nice brown colour.
