- 1½ kgs Beef Chuck , cut into 5cm cubes
- 1½ kgs Fresh Green Beans , washed and tip cut
- 1.4 kgs Tomatoes , ripe and sweet, roughly cut (with their juices)
- 3 tbsp Tomato Paste
- 4 Red Onions , roughly chopped
- 3 cloves Garlic , minced
- 1 cup White Wine
- 2 Bay Leaves
- 1 tbsp dry Coriander , crushed
- 1 tbsp dry Thyme
- ½ tsp Cinnamon , ground
- 80ml EVOO , Extra Virgin Olive Oil
- 500ml Water , warm
- 2 tsp Coarse Sea Salt
- 1 tsp freshly ground Black Pepper
Instructions
- Place a large pot or casserole on high and when it heats up, a minute or two later, pour half the oil and add the half the beef cubes. Sauté each side for 2-3’ until nicely colored and remove from the pan. Repeat for the remaining beef cubes.
- In the same pot, on medium heat pour the remaining oil and add the onions sauteing for just 2’. Add the garlic and sauté for 2’ more. Add the tomato paste and stir into the onions cooking for just 1’. Bring the beef cubes back to the pan and deglaze with the wine on high heat. Allow for the alcohol to evaporate, about 2’, add the coriander, thyme and cinnamon along with the bay leaves
- Add the tomatoes to the pot, season with the salt and pepper and simmer at very low heat, with the lid on, for about 1 hour.
- At the end of the hour add to the pot the green beans and the warm water. Stir and mix gently and simmer at very low heat, with the lid on, for another 1 hour.
- Serve on its own with yoghurt or optionally with mashed potatoes or even rice.
