Of course the quality of the meat matters! But skip the onions or the tomatoes or the oregano or the parsley and you will end up with a boring burger. Give it a try!

Beef Patties in the oven
Servings: 6 People
Ingredients
- 1kg Beef meat , Chuck, minced once
- 1 large white Onion , finely chopped to very small dice
- 2 Tomatoes , grated
- ½ cup fresh Parsley , leaves picked and finely chopped
- 3 tbsp EVOO , Extra Virgin Olive Oil
- 1 tbsp Dry Oregano
- 100g dry fine Breadcrumbs
- 1 tsp Sea Salt
- 1 tsp freshly ground Black Pepper
Instructions
- Place a medium size frying pan on low-medium heat and when hot pour 2 tbsp of the olive oil. Wait for a minute to heat up and add the onions. Sauté for 4’ until translucent and soft.
- In a separate bowl pour the sautéed onions along with their oil, add the minced meat, tomatoes, parsley, breadcrumbs, oregano, salt and pepper. Mix thoroughly and refrigerate for an hour. If you want, you can refrigerate overnight covered with plastic wrap.
- Next day, or an hour later, turn the oven grill to 220°C and place a grill in the middle of the oven.
- In the meantime, take the mixture from the refrigerator and while cold form into small burger patties and place on an oven proof dish. Cook for 5’ and then flip and cook the other side for 3’ more. You are looking for nicely charred patties!
- Serve with bulgur and piccalilli (pickla).
