The secret in my Hot Chicken Wings recipe is in the sauce for a hot, rich and clingy one. You can increase/decrease either the Cayenne pepper or the Hot sauce in my recipe for your heat comfort level.
Hot Chicken Wings
Of course, the basic ingredient is the wings which must be fresh (means that you will go through the process of cutting the joints), and while usually deep fried, I choose to bake them instead which makes them much healthier without sacrificing any crispiness and taste. They are ultra-crispy with the second secret being the Baking powder.

Hot Chicken Wings
Ingredients
- 1.5 kg Chicken Wings , tips removed and cut at the joints in drums and flats
- 1 teaspoon Cayenne Pepper
- 1 ½ tablespoon Baking Powder , (not soda)
- 2 teaspoons Garlic Salt
- 1 teaspoon Smoked Paprika
- 1 teaspoon freshly ground Black Pepper
- 60 gr Unsalted Butter
- 120 ml Original Frank’s Hot Sauce
- 1 tablespoon Honey
Instructions
- Start by preparing the sauce. Place in a microwave oven a large bowl with the butter and melt. Remove from the microwave, add the honey and the hot sauce. Stir to combine and keep aside.
- Preheat the oven with the air circulation on to 230 degrees C. with the rack set in the middle. Use an oven proof dish with a grill rack on the dish and lined with foil to gather the juices.
- Mix the baking Powder with the garlic salt, pepper, smoked paprika and the Cayenne pepper. Pat dry very well the chicken pieces and sprinkle on them the above mixture and toss well to coat evenly.
- Bake for 60 minutes, tossing halfway through until golden brown and crispy.
- Remove from the oven and place in the bowl with the hot sauce and toss to coat. Serve while hot.
