Having so many lemon trees through out the island, not to mention that almost every household has a lemon tree in their backyard, it was inevitable to find more uses than the obvious for lemons.
One of them is fresh lemonade packed with syrupy lemon squash served with cold water and abundant of ice cubes.
Some have gone even further using the squash into alcoholic cocktails, thus the truly Cypriot version of Brand Sour.

Fresh Lemonade Squash
Ingredients
- 1 cup fresh Lemon Juice
- 1 cup fine Sugar
- 2 cups Water
Instructions
- We start by filtering through a sieve the lemon juice. Keep aside.
- Place a small saucepan on low heat and add the sugar and water. Bring to a boil, reduce the heat and allow for a syrup to be created while stirring occasionally. After 5’ pour the filtered lemon juice into the saucepan and allow to warm for 2-3’. Remove from the fire and allow to cool.
- In the meantime, sterilise a glass bottle (750ml) by placing it upside down in a deep pot and cover with water and close with the pots lid. Place on medium heat, bring to a boil and then simmer for 15’. Turn off the heat and let the bottle stand in the hot water for 5’. Then place the bottle the upside down on a rack or clean kitchen towel to dry.
- Fill the bottle while still hot and refrigerate for the months to come!
